West African Chicken Pepper Soup with Sweetcorn Pancakes

It is freezing cold outside and my partner and I are feeling a little poorly. So chicken soup is really the only way to go. I didn't want to eat cream of chicken soup because it's a bit boring, so I went online and found this west African chicken soup that sounded exciting and spicy! Click here for the recipe I followed.

So this is more of a chicken with spicy broth kind of soup, but it was pretty easy to make. We're both a fan of spicy food so I added three red chilli's from Waitrose even though the recipe suggests four to serve six people. It was perfect for me, but others might find this a tad spicy. I also used two skinless breasts of chicken, and one medium potato, but I think two potatoes would have been a better carb/protein ratio, especially when we ate the leftovers for lunch the next day without the pancakes.


My pancakes are a little burnt round the edges, but they were still delicious and tasted great dunked into the spicy soup. The soup itself is great for low fat diets as long as you skin the chicken and go easy on the oil when you fry the chicken. The pancakes, however are oil suckers. I was kind of worried when making them because I was running low on oil, but you can get away with less if you keep an eye on them.


This is the first time I've tried to make West African food and I thought this was delicious so I might go looking for more recipes.
