What to do with leeks?
I decided a leek and bacon pasta would be the perfect way to go for a light Tuesday night supper. It's warming and after the quick preparation you can sit down and relax, or play Rock Band, as I did. ;)
With so few ingredient's its the chicken stock that adds all the flavour to this pasta. And the leeks of course, which turn sweet after the cooking process. I added creme fraiche at the end of this dish although it really doesn't need it.
Ingredients
Pasta
3 rashers smoked streaky Bacon, cut into cubes
2 Leeks, sliced
2 cloves Garlic, crushed
Chicken stock
1/2 tsp Sage
Salt & Pepper
Creme Fraiche (optional)
Recipe
Fry bacon until crisp around the edges.
Add garlic and leeks, fry for 2 minutes. Season.
Add pasta and half the chicken stock. Let simmer for 20 minutes, or until pasta is cooked. Add more chicken stock if the pasta dries out and is not cooked.
Add sage and creme fraiche, if using. Add a bit of stock to loosen the sauce.
Serve and eat.
