Waldorf Salad

I haven't posted for a while, mostly because I've been sick and Byron has been cooking for me. He made me the Italian Sausage Casserole I was going to make to post on this blog as well as some other wonderful delights. In my sickness I forgot to take the pictures, so I guess those will have to wait for another time.

It's also been Christmas! A great time to indulge in cooking delights. For me, I didn't have to cook this year, instead we went to Byron's mum's house on Christmas day for Rib Roast of Beef and a Gammon. I made Jamie Oliver's Bourbon Pecan Pie from Jamie's America, which went down a treat. No pictures this time as it was all gobbled up before I had a chance to take a snap at it. On Boxing Day, we went to my mum's house for Goose Breasts and a rolled Roast Lamb.

So I've had a lot of roasted meats recently, of which I'm getting a little sick of. We even brought some of the leftover roast lamb home, so I made a proper Shepherd's pie with it, pictures and post to come! :)

With all the stodgy food I've been eating recently, and the abundance of stilton, I thought a salad would do me good for a lunchtime treat. And what better than a Waldorf Salad? Again the inspiration has come from Jamie's America book where I got this recipe, it works a treat and was a delicious light lunch today.



Jamie suggests using Dolcelatte, the creaminess of which would match this salad perfectly. I on the other hand used up what was leftover from my quarter moon of stilton. I found it worked just as well.


Ingredients
2 sticks Celery, sliced
150g Stilton, crumbled
1 red Apple
Salad leaves (I used Romaine Lettuce from my vegbox, but sharper leaves like chicory work best)
Handful of Walnuts, crumbled

for the dressing
1 tsp Dijon Mustard
2 tbsp white wine Vinegar
Extra Virgin Olive Oil
1 tbsp Yoghurt
Salt & Pepper to season

Recipe
Mix the dressing separately in a clean empty jar, or small plastic container. Dress the lettuce leaves, add the remaining ingredients on top. Eat.
